Looks Aren’t Everything
Yes, it looks less than appealing, but I can assure you this is the stuff dreams are made of. You can google ‘dressing recipes’ and come up with hundreds of recipes, but do they taste delicious and who has time to find out? Well, the good news is you must be eating more salads or you wouldn’t be googling and I have the time to tell you if it’s delicious or not. The inspiration for this dressing came from the about-to-turn bunch of cilantro and the limes in the fridge. I googled ‘cilantro lime’ and lo and behold, this is some concoction people yearn for after eating something from TGI Fridays. The original recipe is from Allrecipes here, but I have my own version that adds a smokier (and less oily-er) flavor. This dressing goes exceptionally well with a salad of bell peppers, carrots, onions and walnut taco ‘meat’.
Cilantro Jalapeno Lime Dressing
1 jalapeno pepper chopped and seeded
1/8 of the jalapeno seeds (put the rest of the seeds off to the side to adjust hotness)
3 medium cloves garlic
3/4 tsp minced fresh ginger root
1/4 cup fresh lime juice
2 T honey (you can add more later if it’s too hot)
2 tsp balsamic vinegar
1 large bunch cilantro leaves
2-4 T extra-virgin olive oil (adjust to your liking later)
1/2 tsp chipotle chili powder
1 sundried tomato
1/4 tsp salt (Himalayan Pink Salt is strong so less is more)
Place all ingredients into blender and blend until smooth. Season to taste with salt, jalepeno seeds and additional oil if desired before serving. All of the ingredients are perfectly adjustable to taste, so keep everything handy as you’re blending. Some days if I crave a more tart flavor I add additional lime and balsamic. Be free!
